During this demonstration, Erik Waagmeester from De Wit butchery in
Amsterdam, one of the few remaining traditional butchers in the
Netherlands, will show how to get the most from the animal. Trust us,
it's going to be impressive!
Butchery is a profession; an art form in which the very best meat cuts are extracted, while wasting as little as possible. Considering that consumers demand full respect for the animal, the butcher wants to do their job in the best possible way.
In this demonstration, Erik Waagmeester will show what he means by good deboning. When artisan butcher Eric buys his animals, he throws himself into action. The whole animal is used, and in addition to his craftsmanship, he also knows exactly which piece of meat is suitable for every type of cooking.
And there's more. Pork-roasters, Roel and Baaf will be in sight. Because during the de boning, Roel van Vliet and Baaf Vonk from varkensroosteren.nl, will be turning all of the freshly cut pieces of meat into delicious snacks. Double pleasure and enjoyment.
