Nordic Cuisine is currently the most influential tendency in food and cooking. Ben Reade is Head Culinary Research and Development of the Nordic Food Lab, which was established by Claus Meyer and Rene Redzepi of the leading restaurant Noma

In this fascinating laboratory, chefs and food scientist are altering Nordish Cuisine day after day for the better. During Food Film Festival, Ben Reade will speak during this unique seminar about taste. As head of this institute, he will take you an a virtual trip through northern nature. He will show you how tasting works, and how you can manipulate your senses with the numerous ingredients which surround us. A jam session for your senses!

 This seminar is each chef's dream, but also for a lot of other people. That is why we have two seminars during the Food Film Festival: one for professionals, and one for amateurs, in order to give everyone the chance to learn about food on one's own level. In the workshop for professionals, we assume you know a certain vocabulary, and you know how a professional kitchen works.
